chicken corn chowder!

i added a link to the real recipe in the last post. but here is what i did so i could eat it. 

  • 4 slices of real thick bacon (lots of fat!!)
  • 3 shallots diced
  • 1 orange pepper diced
  • 2 cans whole new potatoes diced (whatever boil and peel them. i’m lazy. i use canned!)
  • 1 can of white corn (or small frozen bag white corn)
  • a big handful of broccoli steamed (in the microwave! again, i’m lazy)
  • Shredded chicken (i used leftover rotisserie chicken that was NOT $5, it was $8. where do people shop?)
  • 1/4 cup all purpose flour
  • 2 cups chicken stock
  • 1 cup water
  • 2 cups whole milk
  • 1 cup shredded pepper jack cheese (heaping)
  • 1 cup Monterey jack shredded (heaping) (I used motz because that’s what I had and I used more than a cup for each)
  • 3 sliced green onions


1. Chop bacon into small pieces and cook in your stock pot until done on medium.  There should be lots of fat, to cover the bottom of the pot. If not add butter.
2. Chop onion really small and add to pot. Cover for 1 min to cook.
3. Add pepper (or not I couldn’t really taste mine) and diced potatoes. Stir and cook for about 3 mins.
4. Add corn, broccoli and chicken. Stir and cook about a min.
5. Add flour and stir well to coat.
6. Add chicken stock and water and stir well. Let cook to thicken up some. About 5 mins.
7. Turn heat down to low.
8. Add milk and cheese and green onion. Stir. Let simmer for awhile to melt cheese.
9. Watch it so it doesn’t stick to the bottom. I put mine on warm because it stuck when i was distracted.
10. Add salt and pepper to taste. If its not thick enough for you, then add more flour.
11. Eat!
